Chicken & Vegetable Stir Fry

- 500g chicken breast
- 1 zucchini
- 1/4 green cabbage
- 1 corn cob
- 1/2 bunch broccolini stems/leaves if leftover
- 60g baby spinach
- 2 garlic cloves
- 1 tsp grated ginger
- 3 tbsp soy sauce
- 1 tbsp oil
- Slice chicken thinly.
- Slice zucchini and cut corn kernels off cob.
- Cook chicken in hot pan until browned.
- Add garlic and ginger.
- Add zucchini and corn.
- Stir fry 4–5 mins.
- Add spinach, cabbage and soy sauce.
- Serve with rice/noodles.
