Chicken & Vegetable Stir Fry

Serves: 4 | Cooking Time:

  • 500g chicken breast
  • 1 zucchini 
  • 1/4 green cabbage
  • 1 corn cob
  • 1/2 bunch broccolini stems/leaves if leftover
  • 60g baby spinach
  • 2 garlic cloves
  • 1 tsp grated ginger
  • 3 tbsp soy sauce
  • 1 tbsp oil

  1. Slice chicken thinly.
  2. Slice zucchini and cut corn kernels off cob.
  3. Cook chicken in hot pan until browned.
  4. Add garlic and ginger.
  5. Add zucchini and corn.
  6. Stir fry 4–5 mins.
  7. Add spinach, cabbage and soy sauce.
  8. Serve with rice/noodles.
