Chicken Stir Fry

  • 1 head broccoli, cut into florets
  • 1 carrot, sliced
  • 200g mushrooms, sliced
  • 2 cloves garlic, minced
  • Small handful coriander, chopped

On-hand staples from the pantry

  • 2 tbsp soy sauce
  • 1 tbsp honey or oyster sauce
  • 1 tbsp oil
  • Cooked rice or noodles (to serve)

  1. Heat oil in a wok or large pan.
  2. Add chicken and cook until browned and cooked through.
  3. Add garlic and cook briefly.
  4. Toss in broccoli, carrot, and mushrooms.
  5. Stir fry for 4–5 minutes until tender-crisp.
  6. Add soy sauce and honey/oyster sauce.
  7. Toss well and cook another 1–2 minutes.
  8. Serve over rice or noodles and top with coriander.
