Chicken Stir Fry

- 500g chicken stir fry

- 1 head broccoli, cut into florets
- 1 carrot, sliced
- 200g mushrooms, sliced
- 2 cloves garlic, minced
- Small handful coriander, chopped
On-hand staples from the pantry
- 2 tbsp soy sauce
- 1 tbsp honey or oyster sauce
- 1 tbsp oil
- Cooked rice or noodles (to serve)
- Heat oil in a wok or large pan.
- Add chicken and cook until browned and cooked through.
- Add garlic and cook briefly.
- Toss in broccoli, carrot, and mushrooms.
- Stir fry for 4–5 minutes until tender-crisp.
- Add soy sauce and honey/oyster sauce.
- Toss well and cook another 1–2 minutes.
- Serve over rice or noodles and top with coriander.
