Chicken, Pumpkin & Greens Soup

  • 500g pumpkin (approx)
  • 2 potatoes
  • 2 carrots
  • 1 onion
  • 1/2 bunch chard or spinach

Pantry Staples

  • Garlic
  • Salt & pepper
  • Olive oil
  • Optional: bay leaf or dried herbs

  1. Place chicken frames in a large pot and cover with water.
  2. Bring to the boil, skim any foam, then simmer for 45–60 mins.
  3. Remove frames, cool slightly, and pick off any meat. Set aside.
  4. Add diced pumpkin, potatoes, carrot and onion to the broth.
  5. Simmer for 20 minutes until vegetables are soft.
  6. Add shredded chicken and chopped greens.
  7. Season well and simmer another 5 minutes.
  8. Serve hot.
