Chicken, Pumpkin & Greens Soup

- 500g pumpkin (approx)
- 2 potatoes
- 2 carrots
- 1 onion
- 1/2 bunch chard or spinach
Pantry Staples
- Garlic
- Salt & pepper
- Olive oil
- Optional: bay leaf or dried herbs
- Place chicken frames in a large pot and cover with water.
- Bring to the boil, skim any foam, then simmer for 45–60 mins.
- Remove frames, cool slightly, and pick off any meat. Set aside.
- Add diced pumpkin, potatoes, carrot and onion to the broth.
- Simmer for 20 minutes until vegetables are soft.
- Add shredded chicken and chopped greens.
- Season well and simmer another 5 minutes.
- Serve hot.
