Chicken Mince Meatballs with Zucchini & Tomato

  • Zucchini (remaining)
  • Spinach (half bag)
  • Tomatoes (if any left or use canned)

Pantry Staples

  • Breadcrumbs, egg, herbs, garlic, passata

  1. Mix chicken mince, garlic, herbs, egg, breadcrumbs.
  2. Roll into meatballs.
  3. Brown in pan, then add passata.
  4. Add sliced zucchini. Simmer 15 mins.
  5. Stir through spinach at end.

Serve over spaghetti squash

Box Produce

  • 1 spaghetti squash

Method

  • Halve, remove seeds.
  • Roast cut-side down at 200°C for ~40 mins.
  • Scrape into “spaghetti” strands.
