Chicken, Broccoli & Zucchini Sauté

A quick and colourful stir-fry loaded with chicken and crisp vegetables, perfect for busy weeknights when you need something healthy on the table fast.

Serves: 4 | Cooking Time: 20

250g Chicken Breast (remaining)

400g Broccoli

400g Zucchini

125g Carrots (remaining)

oil for cooking

salt and pepper

optional: soy sauce, garlic, ginger

Prep the Veg: Cut broccoli into small florets. Slice zucchini into half-moons. Slice carrots thinly on the diagonal.

Prep the Chicken: Slice chicken breast into thin strips.

Cook the Chicken: Heat oil in a large pan or wok over medium-high heat. Add chicken strips and cook until golden and cooked through (approx. 5-6 mins). Remove and set aside.

Sauté the Veg: In the same pan, add carrots first (they take longest). Cook for 2 minutes, then add broccoli and zucchini.

Steam-Fry: Add a splash of water (or soy sauce for extra flavour) to the pan. Cover and let vegetables steam for 3–4 minutes until tender-crisp.

Combine: Return chicken to the pan. Toss everything together and season with salt and pepper.

Serve: Perfect over rice or quinoa if you have pantry grains available.
