Chicken, Broccoli & Cabbage Stir-Fry
This uses the hardier vegetables and the chicken tenders for a fast, high-protein dinner.
Fresh Ingredients:
- 500g Chicken Tenders (sliced)
- Broccoli (cut into florets)
- Carrots (sliced thin or julienned)
- 1/4 of the Cabbage (shredded)
- Zucchini (sliced)
- Spring Onions
Pantry Staples:
- Cooking oil
- Soy sauce
- Garlic
- Ginger (fresh or powder)
- Sugar/Honey
- Sesame oil (optional)
Instructions:
- Heat oil in a wok or large frying pan over high heat.
- Add the chicken pieces and stir-fry until golden and cooked through. Remove chicken from the pan and set aside.
- Add a little more oil and toss in the broccoli and carrots. Stir-fry for 2-3 minutes.
- Add the zucchini and shredded cabbage. Cook for another 2 minutes until veggies are tender-crisp.
- Return the chicken to the pan. Add soy sauce, garlic, ginger, and a pinch of sugar. Toss everything to coat.
- Serve over rice or noodles, garnished with spring onions.
