Chicken, Broccoli & Cabbage Stir-Fry

This uses the hardier vegetables and the chicken tenders for a fast, high-protein dinner.

Fresh Ingredients: 

  • 500g Chicken Tenders (sliced)
  • Broccoli (cut into florets)
  • Carrots (sliced thin or julienned)
  • 1/4 of the Cabbage (shredded)
  • Zucchini (sliced)
  • Spring Onions

Pantry Staples: 

  • Cooking oil
  • Soy sauce
  • Garlic
  • Ginger (fresh or powder)
  • Sugar/Honey
  • Sesame oil (optional)

Instructions:

  1. Heat oil in a wok or large frying pan over high heat.
  2. Add the chicken pieces and stir-fry until golden and cooked through. Remove chicken from the pan and set aside.
  3. Add a little more oil and toss in the broccoli and carrots. Stir-fry for 2-3 minutes.
  4. Add the zucchini and shredded cabbage. Cook for another 2 minutes until veggies are tender-crisp.
  5. Return the chicken to the pan. Add soy sauce, garlic, ginger, and a pinch of sugar. Toss everything to coat.
  6. Serve over rice or noodles, garnished with spring onions.
