Charred Pineapple & Coconut Veggie Rice Bowls

A completely different style meal this week — fresh, colourful and fully vegetarian.

  • Vegetarian meal

Box Contents

  • Pineapple
  • 1/2 broccoli
  • 1 cucumber
  • 2 tomatoes
  • Lettuce
  • 1 carrot
  • Remaining zucchini
  • 20g ginger

Pantry Staples

  • Rice
  • Coconut milk
  • Soy sauce
  • Lime or vinegar
  • Peanut butter (optional)

  1. Cook rice with a splash of coconut milk.
  2. Roast broccoli, carrot and zucchini with ginger.
  3. Pan-char pineapple pieces until caramelised.
  4. Slice cucumber and tomatoes.
  5. Layer lettuce, coconut rice, roasted vegetables and pineapple into bowls.
  6. Drizzle with soy-lime dressing or peanut sauce.
