Slaw:
- 1 bunch carrots, grated
- 2 apples, julienned or grated
- 1 cup baby spinach, finely shredded
- 1/4 cup fresh herbs (parsley), chopped
- 1/4 cup raisins or dried cranberries (optional)
- 1/4 cup toasted sunflower seeds

- 3 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Step 1: Prepare Vegetables Peel and grate carrots. Core and julienne or grate apples. Finely shred baby spinach. Chop fresh herbs. Combine all in a large bowl.
Step 2: Make Dressing In a small jar, combine olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper. Shake well until emulsified.
Step 3: Dress Slaw Pour dressing over the slaw and toss well to coat everything evenly.
Step 4: Add Extras and Serve Toss in raisins or dried cranberries and toasted sunflower seeds just before serving.
STORAGE TIPS
Refrigerator: Store dressed slaw for up to 2 days. The apples may brown slightly, but the taste remains good.
Make Ahead: Prepare vegetables and dressing separately. Combine just before serving for maximum crunch.
Prevent Browning: Toss apples in a little lemon juice if preparing ahead.
VARIATIONS
Add Cabbage: Include shredded cabbage for extra crunch and volume.
Different Fruit: Use a pear instead of an apple for variation.
Nuts Instead of Seeds: Use chopped walnuts or pecans instead of sunflower seeds.
Creamy Version: Add 2 tablespoons Greek yogurt or mayonnaise to the dressing.
