Caramelised Apple & Pear Pancakes

Fluffy homemade pancakes topped with warm, glossy caramelised apple and pear cooked in butter, brown sugar and cinnamon — lovely with a dollop of natural yoghurt.

OrganicBox fruit

  • 2 apples, approximately 300g
  • 2 pears, approximately 300g

Pancakes

  • 1½ cups self-raising flour
  • 1 tbsp sugar
  • 1 egg
  • 1¼ cups milk
  • 30g melted butter

Caramelised fruit

  • 20g butter
  • 1 tbsp brown sugar or maple syrup
  • ½ tsp cinnamon
  • 2 tbsp water

  1. Core apples and pears and thinly slice. No need to peel them.
  2. Melt butter in a frying pan over medium heat.
  3. Add fruit, brown sugar/maple syrup, cinnamon and water.
  4. Cook gently for 8–10 minutes, stirring occasionally, until the fruit is soft and glossy.
  5. Meanwhile, combine flour and sugar.
  6. Whisk egg, milk and melted butter together and gently mix into the flour. Don't overmix.
  7. Cook pancakes in a lightly greased frying pan over medium heat for approximately 2 minutes on the first side and 1 minute on the second.
  8. Stack pancakes and spoon the warm caramelised apples and pears over the top.

Lovely with natural yoghurt.
