Caramelised Apple & Pear Pancakes
Fluffy homemade pancakes topped with warm, glossy caramelised apple and pear cooked in butter, brown sugar and cinnamon — lovely with a dollop of natural yoghurt.
OrganicBox fruit
- 2 apples, approximately 300g
- 2 pears, approximately 300g
Pancakes
- 1½ cups self-raising flour
- 1 tbsp sugar
- 1 egg
- 1¼ cups milk
- 30g melted butter
Caramelised fruit
- 20g butter
- 1 tbsp brown sugar or maple syrup
- ½ tsp cinnamon
- 2 tbsp water
- Core apples and pears and thinly slice. No need to peel them.
- Melt butter in a frying pan over medium heat.
- Add fruit, brown sugar/maple syrup, cinnamon and water.
- Cook gently for 8–10 minutes, stirring occasionally, until the fruit is soft and glossy.
- Meanwhile, combine flour and sugar.
- Whisk egg, milk and melted butter together and gently mix into the flour. Don't overmix.
- Cook pancakes in a lightly greased frying pan over medium heat for approximately 2 minutes on the first side and 1 minute on the second.
- Stack pancakes and spoon the warm caramelised apples and pears over the top.
Lovely with natural yoghurt.
