Butter Bean Roast Veg Salad

Protein: 400g Butter Beans

Box Ingredients:

  • Cos lettuce
  • Cucumber
  • Tomatoes (remaining)
  • Zucchini (if any left)
  • Sweet corn (if 1 left)

Pantry Staples:

  • Olive oil
  • Vinegar or lemon
  • Salt, pepper

  1. Roast any remaining veg (zucchini, corn, etc.).
  2. Rinse butter beans.
  3. Chop lettuce, cucumber, tomatoes.
  4. Toss everything together with dressing.
  5. Top with warm roasted veg + beans.
