Brown Lentil, Pumpkin & Spinach Curry

  • 500g pumpkin (approx)
  • 1/2 onion
  • 1 handful spinach or chard

Pantry Staples

  • Curry powder or paste
  • Garlic
  • Coconut milk (optional)
  • Oil
  • Salt
  • Rice

  1. Heat oil in a pot, sauté onion and garlic.
  2. Add curry powder/paste and cook until fragrant.
  3. Add diced pumpkin and stir to coat.
  4. Add lentils and a splash of water (and coconut milk if using).
  5. Simmer 15–20 minutes until pumpkin is soft.
  6. Stir through spinach until wilted.
  7. Season and serve with rice.
