Brown Lentil, Pumpkin & Spinach Curry

- 500g pumpkin (approx)
- 1/2 onion
- 1 handful spinach or chard
Pantry Staples
- Curry powder or paste
- Garlic
- Coconut milk (optional)
- Oil
- Salt
- Rice
- Heat oil in a pot, sauté onion and garlic.
- Add curry powder/paste and cook until fragrant.
- Add diced pumpkin and stir to coat.
- Add lentils and a splash of water (and coconut milk if using).
- Simmer 15–20 minutes until pumpkin is soft.
- Stir through spinach until wilted.
- Season and serve with rice.
