Broccoli And Avocado Pasta

This creamy broccoli and avocado pasta is the best for busy weeknights. The avocado creates a silky, creamy sauce without any cream, and the broccoli from your organic vegetable box adds nutrition and texture. Kids love it and it's ready in under 30 minutes.

Serves: 5 | Cooking Time: 25 mins

  • 400g broccoli, cut into small florets
  • 2 small avocados, ripe
  • 1 cup superfood mix or spinach
  • 1 punnet cherry tomatoes, halved
  • 400g pasta (penne, fusilli, or spaghetti)
  • 3 cloves garlic, minced
  • Juice of 1 lemon
  • ¼ cup olive oil
  • ½ cup pasta cooking water
  • Salt and pepper
  • Optional: parmesan cheese, pine nuts, fresh basil

  1. Cook pasta according to package directions. In the last 3 minutes, add broccoli florets to the pasta water.
  2. Before draining, reserve 1 cup of pasta cooking water. Drain pasta and broccoli. Set aside.
  3. While pasta cooks, make the avocado sauce: In a food processor or blender, combine avocados, superfood mix or spinach, garlic, lemon juice, olive oil, and ¼ cup pasta water.
  4. Blend until completely smooth and creamy. Season with salt and pepper.
  5. If the sauce is too thick, add more pasta water until you reach the desired consistency.
  6. Return drained pasta and broccoli to the pot. Pour avocado sauce over and toss to coat. Add halved cherry tomatoes and toss gently.
  7. Taste and adjust seasoning. Add more lemon juice if needed.
  8. Serve immediately, topped with parmesan, pine nuts, and fresh basil.

Serving Suggestions:

Pair with grilled organic chicken for extra protein. Add organic feta for a Mediterranean twist.

Storage: Best eaten fresh. Avocado sauce may brown slightly when stored, but it's still fine to eat within 1 day.
