Broccoli & "Cheesy" Cauliflower Fritters

Great for using up the brassicas in a kid-friendly finger food format. Good for lunch or a light dinner.

  • Produce Used: Broccoli (0.4kg), Cauliflower (remaining 1/2 head).
  • Protein: Eggs (Pantry/Add-on) or add a side of Leftover Cold Chicken/Beef.

  1. Steam Broccoli and remaining Cauliflower until soft. Mash roughly with a fork.
  2. Mix with flour, eggs (or a flax egg for plant-based), and seasoning.
  3. Form into patties and pan-fry in a little oil until golden brown on both sides.
  4. Serve with a fresh side salad using any leftover lettuce/cucumber/tomato.
