Broccoli Celery Fritters

Fritters:

  • 500g broccoli, finely chopped
  • 2 celery stalks, finely diced
  • 3 cloves garlic, minced
  • 1/2 cup fresh herbs (parsley), chopped
  • 2 eggs, beaten
  • 1/2 cup plain flour
  • 1/2 cup grated parmesan
  • 1 teaspoon baking powder
  • Salt and pepper to taste
  • Olive oil for frying

To Serve:

  • Greek yogurt or sour cream
  • Lemon wedges
  • Fresh rocket

Step 1: Prepare Vegetables Finely chop broccoli into very small pieces (including stems). Finely dice celery. Mince garlic and chop herbs. Place all in a large bowl.

Step 2: Make Batter Add beaten eggs, flour, grated parmesan, baking powder, salt, and pepper to the vegetables. Mix well until everything is combined and the mixture holds together.

Step 3: Fry Fritters Heat 2 tablespoons olive oil in a large frying pan over medium heat. Scoop 1/4 cup of mixture per fritter into the pan. Flatten slightly with a spatula. Cook for 3-4 minutes per side until golden brown and cooked through. Work in batches, adding more oil as needed.

Step 4: Drain and Serve Drain fritters on paper towels. Serve hot with Greek yogurt or sour cream, lemon wedges, and fresh rocket on the side.

STORAGE TIPS

Refrigerator: Store cooked fritters in an airtight container for up to 3 days.

Freezer: Freeze cooked fritters between layers of baking paper for up to 2 months.
