Black Bean Sweet Potato Taco Bowls

Serves: 4 | Cooking Time:

  • 1 tin black beans (400g)
  • 200g sweet potato
  • 200g tomatoes
  • 1/2 baby cos lettuce
  • 100g red onion
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tbsp oil
  • Juice of 1 lime/lemon if available

  1. Dice sweet potato and roast at 220C for 25 mins.
  2. Drain black beans and warm with cumin and paprika.
  3. Dice tomatoes and onion for salsa.
  4. Slice lettuce.
  5. Build bowls with rice, sweet potato, beans, salsa and lettuce.
