Black Bean Sweet Potato Taco Bowls
Serves: 4 | Cooking Time:
- 1 tin black beans (400g)
- 200g sweet potato
- 200g tomatoes
- 1/2 baby cos lettuce
- 100g red onion
- 1 tsp cumin
- 1 tsp paprika
- 1 tbsp oil
- Juice of 1 lime/lemon if available
- Dice sweet potato and roast at 220C for 25 mins.
- Drain black beans and warm with cumin and paprika.
- Dice tomatoes and onion for salsa.
- Slice lettuce.
- Build bowls with rice, sweet potato, beans, salsa and lettuce.
