Beef & Veggie Stuffed Capsicums + Roast Potatoes

Protein: 500g Beef Mince
Box Ingredients:
- Red capsicum
- Tomatoes
- Carrots (½)
- Spring onions
- Potatoes (½ kg)
Pantry Staples:
- Garlic, olive oil
- Salt, pepper
- Dried herbs or Italian seasoning
- Preheat oven to 200°C. Chop potatoes, toss in oil + salt, roast 30–35 mins.
- Slice capsicum in half, remove seeds.
- Cook mince in pan, add chopped tomatoes, grated carrot, garlic, herbs. Simmer 10 mins.
- Stir through sliced spring onions.
- Fill capsicums, bake 20 mins until soft.
- Serve with roast potatoes.
