Beef Sausages with Creamy Pumpkin Mash, Garlic Asparagus & Broccoli
A simple, comforting family dinner that lets the beautiful seasonal vegetables shine.
Protein: 2 packs of 6 Certified Organic BBQ Beef Sausages
- 2 × 6-packs BBQ beef sausages
- 500g Jap pumpkin, peeled and cubed
- 400g potatoes, peeled and cubed
- 1 bunch asparagus, woody ends removed
- 250g broccoli, cut into florets
- 2 garlic cloves, crushed
- 2 tbsp butter
- 1/4 cup milk
- Olive oil
- Salt and pepper
- Place pumpkin and potatoes in a saucepan of salted water. Bring to the boil and simmer for 15–20 minutes until soft.
- Meanwhile, cook sausages in a large frying pan over medium heat, turning regularly until browned and cooked through.
- Drain pumpkin and potatoes thoroughly. Return to the warm saucepan for a minute to remove excess moisture.
- Add butter and milk, then mash until smooth and creamy. Season.
- Steam broccoli for 3–4 minutes until tender but still bright green.
- Heat a little olive oil in a frying pan, add garlic and asparagus, and cook for 3–5 minutes until just tender.
- Serve sausages over a generous helping of pumpkin mash with asparagus and broccoli.
TIP: Pumpkin contains more moisture than potato, so drain it really well before mashing.
Optional: Make a quick onion gravy with a little extra brown onion and beef stock.
