Beef & Mushroom Cottage Pie
Serves: 5 | Cooking Time:
- 500g extra lean mince
- 400g potatoes
- 120g brown mushrooms
- 1/2 bunch silverbeet
- 100g red onion
- 2 garlic cloves
- 1 tbsp tomato paste
- 1 tbsp flour
- 1 cup stock/water
- 30g butter
- Boil potatoes until soft.
- Mash with butter, salt and pepper.
- Cook onion and garlic in oil.
- Add mince and brown well.
- Add mushrooms and chopped silverbeet stems.
- Stir in flour and tomato paste.
- Add stock and simmer 10 mins.
- Stir through silverbeet leaves.
- Top with mash and bake at 200C for 20 mins.
