Beef & Mushroom Cottage Pie

Serves: 5 | Cooking Time:

  • 500g extra lean mince
  • 400g potatoes
  • 120g brown mushrooms
  • 1/2 bunch silverbeet
  • 100g red onion
  • 2 garlic cloves
  • 1 tbsp tomato paste
  • 1 tbsp flour
  • 1 cup stock/water
  • 30g butter

  1. Boil potatoes until soft.
  2. Mash with butter, salt and pepper.
  3. Cook onion and garlic in oil.
  4. Add mince and brown well.
  5. Add mushrooms and chopped silverbeet stems.
  6. Stir in flour and tomato paste.
  7. Add stock and simmer 10 mins.
  8. Stir through silverbeet leaves.
  9. Top with mash and bake at 200C for 20 mins.
