- Cos lettuce (leaves separated)
- 1 carrot (grated)
- 1/2 cucumber (diced)
- Cherry tomatoes (halved)
- 1/2 onion
Pantry Staples
- Olive oil
- Garlic
- Ground cumin or taco seasoning
- Salt & pepper
- Optional: rice
- Heat oil in a pan, sauté onion and garlic.
- Add beef mince and cook until browned.
- Stir in spices, salt and pepper.
- Cook until fully cooked and slightly caramelised.
- Prepare salad: carrot, cucumber, tomatoes.
- Serve mince in lettuce cups OR over rice.
- Top with fresh vegetables.
