Beef & Kidney Bean Burrito Bowls

A hearty way to stretch the beef mince using the kidney beans and fresh salad ingredients.

Serves: 4 | Cooking Time: 30 mins

Fresh Ingredients: 

Pantry Staples: 

  • Rice
  • Olive oil
  • Cumin
  • Paprika
  • Garlic powder (or fresh garlic)
  • Salt/Pepper.

  1. Cook a pot of rice according to package instructions.
  2. In a large pan, brown the beef mince. Drain excess fat.
  3. Add the kidney beans and season heavily with cumin, paprika, salt, and pepper (or a taco seasoning packet if you have one). Add a splash of water and simmer for 5 minutes until thickened.
  4. While the beef cooks, chop the lettucetomatoescucumber, and avocado.
  5. Assemble: Place rice in bowls, top with the beef/bean mixture, and pile high with the fresh salad vegetables. Top with sliced spring onions.
