Beef & Kidney Bean Burrito Bowls
A hearty way to stretch the beef mince using the kidney beans and fresh salad ingredients.
Fresh Ingredients:
- 500g Beef Mince
- 400g Red Kidney Beans (drained)
- Cos Lettuce
- Tomatoes
- Avocado
- Spring Onions
- Cucumber.
Pantry Staples:
- Rice
- Olive oil
- Cumin
- Paprika
- Garlic powder (or fresh garlic)
- Salt/Pepper.
- Cook a pot of rice according to package instructions.
- In a large pan, brown the beef mince. Drain excess fat.
- Add the kidney beans and season heavily with cumin, paprika, salt, and pepper (or a taco seasoning packet if you have one). Add a splash of water and simmer for 5 minutes until thickened.
- While the beef cooks, chop the lettuce, tomatoes, cucumber, and avocado.
- Assemble: Place rice in bowls, top with the beef/bean mixture, and pile high with the fresh salad vegetables. Top with sliced spring onions.
