Beef & Hidden Veggie Tacos

Hidden vegetables, Quick 25-minute dinner, Fun family meal

Protein: OrganicBox Beef Mince (500g–750g)

From Your Large Family Box:

  • 150g carrots (finely grated)
  • 1 zucchini (~200g, grated)
  • ½ punnet cherry tomatoes (halved)
  • ¼ bag baby spinach (shredded)
  • ½ cucumber (~150g, diced)

Pantry:

Taco seasoning, tortillas, 1 tbsp olive oil

  1. Heat oil in pan. Brown beef mince.
  2. Stir in grated carrot and zucchini. Cook 5–7 mins (they blend into the mince).
  3. Add taco seasoning with a splash of water. Simmer 5 minutes.
  4. Serve in tortillas topped with tomatoes, cucumber and spinach.
