Beef & "Hidden Greens" Loaded Potatoes

Fluffy roasted potatoes loaded with savoury beef, wilted silverbeet and tomatoes create a satisfying meal where vegetables take centre stage alongside quality protein.

  • 250g Lean Mince (remaining)
  • 750g Potatoes (remaining)
  • 1/2 bunch Silverbeet (remaining)
  • 125g Tomatoes (remaining)
  • 1 handful Baby Spinach
  • oil for cooking
  • salt and pepper

Roast the Potatoes: Preheat oven to 200°C. Wash potatoes and prick several times with a fork. Rub with oil and salt. Place on a baking tray and roast for 45–60 minutes until soft inside and crispy outside.

Make the Filling: While potatoes roast, finely shred silverbeet. Dice tomatoes.

Brown the Meat: Heat oil in a pan over medium heat. Add mince and brown, breaking it up as it cooks (approx. 5-7 mins).

Add Greens: Stir in shredded silverbeet and diced tomatoes. Cook for 3–4 minutes until silverbeet wilts and tomatoes break down to create a sauce. Season generously.

Assemble: Split roasted potatoes open (be careful, they're hot!). Fluff the insides with a fork.

Load & Serve: Spoon the beef and greens mixture generously into each potato. Top with a handful of baby spinach - the heat from the filling will wilt it slightly for extra hidden greens.
