Barramundi & Organic Sausages with Charred Corn, Cucumber & Apple Crunch Salad

Family Fish Night – Fish for the Grown-Ups, Sausages for the Kids!

We know not every child is going to jump up and down about fish! So this week the grown-ups get beautiful barramundi while the kids can enjoy familiar Cleaver's Organic Sausages — with everyone sharing the same fresh, crunchy salad.

Serves: 4 | Cooking Time:

  • 2 × 120g barramundi portions
  • 1 pack Cleaver's Organic Sausages
  • 2 sweet corn cobs
  • 300g Lebanese cucumber, chopped
  • 1 apple, thinly sliced
  • Approx. 50g baby spinach
  • Juice of 1 orange
  • 1 tbsp olive oil, plus extra for cooking*
  • 1 tsp Dijon mustard*
  • 1 tsp honey*
  • Salt and pepper*

*Pantry item

  1. Cook the sausages in a frying pan, BBQ or oven until browned and completely cooked through.
  2. Meanwhile, cook the corn in a hot frying pan or on the BBQ, turning until lightly charred.
  3. Allow the corn to cool slightly, then carefully slice the kernels from the cobs.
  4. Combine the corn, cucumber, apple and baby spinach in a large bowl.
  5. Whisk together the orange juice, olive oil, Dijon mustard and honey. Season to taste.
  6. Toss the dressing through the salad just before serving.
  7. Pat the barramundi dry and season with salt and pepper.
  8. Heat a little olive oil in a frying pan and cook the barramundi until golden and completely cooked through.
  9. Serve the barramundi for the adults and sausages for the kids, with plenty of crunchy salad alongside.
