Banana Sticky Toffee Pudding

Serves: 6 | Cooking Time:

  • 3–4 ripe bananas
  • 100g butter
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 cup flour
  • 1 tsp baking powder
  • 1 tsp vanilla
  • Pinch cinnamon

Sauce

  • 1/2 cup brown sugar
  • 40g butter
  • 1/2 cup cream

  1. Heat oven to 180C.
  2. Mash bananas.
  3. Cream butter and sugar.
  4. Add eggs and vanilla.
  5. Fold in flour, baking powder and cinnamon.
  6. Stir in bananas.
  7. Bake 30–35 mins.

Sauce

  1. Heat butter, sugar and cream until smooth.
  2. Pour over warm pudding.

Serve with ice cream or yoghurt.
