Banana Pancakes

Perfect for breakfast, dessert or lunchbox snacks.

Serves: 3 | Cooking Time:

  • 2 ripe bananas
  • 2 eggs
  • 1/2 cup rolled oats
  • 1/2 tsp cinnamon
  • Butter or oil for cooking

Optional Extras

  • sliced apple or pear on top
  • yoghurt
  • honey/maple syrup

  1. Mash bananas in bowl.
  2. Whisk in eggs.
  3. Stir through oats and cinnamon.
  4. Heat lightly oiled pan over medium heat.
  5. Spoon small pancakes into pan.
  6. Cook 2–3 mins each side.

Serve warm with sliced fruit.
