Banana Pancakes

These fluffy banana pancakes are naturally sweet, wholesome, and absolutely delicious. Using ripe organic bananas from your organic box, Large Family Box, they're perfect for weekend breakfasts or lazy Sunday mornings. The bananas add natural sweetness, so you don't need much added sugar.

  • 3 ripe bananas, mashed (reserve 1 for topping)
  • Optional: 1 apple, grated (for extra moisture)
  • 2 Eggs
  • 1 cup milk 
  • 1½ cups self-raising flour
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • Pinch of salt
  • Butter or oil for cooking
  • Toppings: extra sliced banana, berries, yoghurt, maple syrup

  1. In a large bowl, mash 2 ripe bananas until smooth (some lumps are fine).
  2. Add eggs, milk, honey, and vanilla extract to the mashed bananas. Whisk until well combined.
  3. If using grated apple, add it now for extra moisture and natural sweetness.
  4. In a separate bowl, mix flour, cinnamon, and salt.
  5. Add dry ingredients to wet ingredients. Stir gently until just combined. Don't overmix, a few lumps are perfect! The batter should be thick but pourable.
  6. Let the batter rest for 5 minutes while you heat the pan.
  7. Heat a large non-stick frying pan or griddle over medium heat. Add a small amount of butter or oil.
  8. Pour ¼ cup of batter per pancake onto the hot pan. Cook for 2-3 minutes until bubbles form on the surface and edges look set.
  9. Flip carefully and cook for another 2 minutes until golden brown.
  10. Transfer to a plate and keep warm. Repeat with the remaining batter.

Serve warm, topped with sliced banana, fresh berries, organic yoghurt, and a drizzle of maple syrup or organic honey.

Storage: You can keep cooked pancakes in the fridge for 3 days. Reheat in a toaster or microwave. Freeze for up to 2 months – great for quick weekday breakfasts!

Make Them Extra Fluffy: Separate the eggs. Add yolks to the wet mixture, beat whites until soft peaks form, then fold gently into the batter at the end.

Healthy Boost: Add a tablespoon of chia seeds or ground flaxseed to the batter for extra fibre and omega-3s.
