Banana Oat Muffins
Wholesome, oat-packed muffins made with ripe banana, cinnamon and a touch of honey. Easy to whip up, freezer-friendly, and simple to customise with chocolate chips, nuts or sultanas.

- 3 ripe bananas, approximately 300g peeled

- 1½ cups rolled oats
- 1 cup self-raising flour
- 1 tsp cinnamon
- 2 eggs
- ⅓ cup milk
- ¼ cup melted butter or neutral oil
- ¼ cup honey or maple syrup
- 1 tsp vanilla
- Preheat oven to 180°C and line a muffin tray.
- Mash bananas in a large bowl.
- Add eggs, milk, butter/oil, honey and vanilla and mix well.
- Stir in oats, flour and cinnamon until just combined.
- Divide between muffin holes.
- Bake for approximately 18–22 minutes or until golden and a skewer comes out clean.
- Cool on a wire rack.
Optional additions:A handful of chocolate chips, chopped nuts or sultanas.
