Banana Oat Muffins

Wholesome, oat-packed muffins made with ripe banana, cinnamon and a touch of honey. Easy to whip up, freezer-friendly, and simple to customise with chocolate chips, nuts or sultanas.

  • 3 ripe bananas, approximately 300g peeled

Pantry

  • 1½ cups rolled oats
  • 1 cup self-raising flour
  • 1 tsp cinnamon
  • 2 eggs
  • ⅓ cup milk
  • ¼ cup melted butter or neutral oil
  • ¼ cup honey or maple syrup
  • 1 tsp vanilla

  1. Preheat oven to 180°C and line a muffin tray.
  2. Mash bananas in a large bowl.
  3. Add eggs, milk, butter/oil, honey and vanilla and mix well.
  4. Stir in oats, flour and cinnamon until just combined.
  5. Divide between muffin holes.
  6. Bake for approximately 18–22 minutes or until golden and a skewer comes out clean.
  7. Cool on a wire rack.

Optional additions:A handful of chocolate chips, chopped nuts or sultanas.
