Banana & Cinnamon Pikelets

Pantry ingredients
- 1 cup self-raising flour
- 1 egg
- ¾ cup milk
- 1 tsp ground cinnamon
- Butter for cooking
- Honey, maple syrup or yoghurt to serve
- Mash the bananas until smooth.
- Whisk together the egg and milk, then stir in the flour and cinnamon until just combined.
- Fold through the mashed banana.
- Heat a lightly buttered frying pan over medium heat.
- Spoon small amounts of batter into the pan.
- Cook for 2–3 minutes, until bubbles appear on the surface, then flip and cook for a further 1–2 minutes until golden.
- Serve warm with honey, maple syrup or yoghurt.
