Banana & Cinnamon Pikelets

  • 2 ripe bananas

Pantry ingredients

  • 1 cup self-raising flour
  • 1 egg
  • ¾ cup milk
  • 1 tsp ground cinnamon
  • Butter for cooking
  • Honey, maple syrup or yoghurt to serve

  1. Mash the bananas until smooth.
  2. Whisk together the egg and milk, then stir in the flour and cinnamon until just combined.
  3. Fold through the mashed banana.
  4. Heat a lightly buttered frying pan over medium heat.
  5. Spoon small amounts of batter into the pan.
  6. Cook for 2–3 minutes, until bubbles appear on the surface, then flip and cook for a further 1–2 minutes until golden.
  7. Serve warm with honey, maple syrup or yoghurt.
