Banana & Avocado "Power" Bowl

While this sounds like breakfast, the addition of egg and the creaminess of the avocado make it a great high-energy recovery meal or a unique savory-sweet lunch.

Serves: 1 | Cooking Time: 10 minutes

  • 2 Eggs
  • 1 Banana (sliced)
  • 1/2 Avocado (cubed)
  • 1/2 cup Sultana Grapes
  • 1 Carrot (shaved into ribbons)
  • Handful of Snow Peas (raw for crunch)

  1. Boil the eggs for 7 minutes (soft-medium yolk). Peel and halve them.
  2. In a bowl, create a base with the shaved carrot ribbons and snow peas.
  3. Arrange the sliced banana and avocado on top.
  4. Sprinkle the sultanas over the bowl for a burst of energy.
  5. Place the eggs on top and season with a pinch of salt and pepper.
