Banana & Apple Cinnamon Loaf

  • 2 ripe Bananas
  • 2 Apples, peeled and diced

Pantry Ingredients

  • 125g butter, melted (or ½ cup olive oil)
  • ¾ cup brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 cups self-raising flour
  • 1 tsp ground cinnamon
  • ½ tsp mixed spice (optional)
  • ¼ cup milk

  1. Preheat the oven to 180°C (160°C fan-forced).
  2. Grease and line a standard loaf tin with baking paper.
  3. Mash the bananas in a large mixing bowl.
  4. Add the melted butter, brown sugar, eggs and vanilla, then whisk until well combined.
  5. Fold through the diced apples.
  6. Sift in the self-raising flour, cinnamon and mixed spice (if using).
  7. Pour in the milk and gently mix until just combined. Avoid over-mixing.
  8. Spoon the mixture into the prepared loaf tin and smooth the top.
  9. Bake for 55–60 minutes, or until a skewer inserted into the centre comes out clean.
  10. Leave the loaf in the tin for 10 minutes, then transfer to a wire rack to cool.

Serving Suggestion

Serve warm with butter, or enjoy with a dollop of Greek yoghurt for dessert.

Storage

Store in an airtight container for up to 4 days, or freeze slices for up to 3 months.
