Banana & Apple Cinnamon Loaf

- 2 ripe Bananas
- 2 Apples, peeled and diced
Pantry Ingredients
- 125g butter, melted (or ½ cup olive oil)
- ¾ cup brown sugar
- 2 eggs
- 1 tsp vanilla extract
- 2 cups self-raising flour
- 1 tsp ground cinnamon
- ½ tsp mixed spice (optional)
- ¼ cup milk
- Preheat the oven to 180°C (160°C fan-forced).
- Grease and line a standard loaf tin with baking paper.
- Mash the bananas in a large mixing bowl.
- Add the melted butter, brown sugar, eggs and vanilla, then whisk until well combined.
- Fold through the diced apples.
- Sift in the self-raising flour, cinnamon and mixed spice (if using).
- Pour in the milk and gently mix until just combined. Avoid over-mixing.
- Spoon the mixture into the prepared loaf tin and smooth the top.
- Bake for 55–60 minutes, or until a skewer inserted into the centre comes out clean.
- Leave the loaf in the tin for 10 minutes, then transfer to a wire rack to cool.
Serving Suggestion
Serve warm with butter, or enjoy with a dollop of Greek yoghurt for dessert.
Storage
Store in an airtight container for up to 4 days, or freeze slices for up to 3 months.
