Asian Vegetable Stir-fry

When you need dinner on the table fast, this Asian vegetable stir-fry is your answer. Using fresh organic vegetables from your box, this colourful dish comes together in just 20 minutes. Whether you add organic beef strips for protein or keep it vegetarian with tofu, this stir-fry proves that healthy eating doesn't have to be complicated.

Serves: 4 | Cooking Time: 22 mins

Ingredients:

  • 1 bunch asparagus, cut into 5cm pieces
  • 400g broccoli florets
  • 250g zucchini, sliced
  • 200g red capsicum, sliced
  • ½ red onion, sliced
  • 1 cup baby spinach
  • Organic Beef Strips 500g OR Organic Fish Fillets OR firm tofu
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon honey or maple syrup
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon sesame seeds
  • Cooked rice or noodles to serve

Directions:

  1. Mix soy sauce, sesame oil, honey, garlic, and ginger in a small bowl. Set aside.
  2. Heat a wok or large pan over high heat with 1 tablespoon oil.
  3. Add organic beef strips and stir-fry for 3-4 minutes until browned. Remove and set aside.
  4. Add broccoli and asparagus to the wok. Stir-fry for 3 minutes.
  5. Add zucchini, capsicum, and red onion. Cook for another 3 minutes.
  6. Return beef to the wok. Pour sauce over everything and toss for 2 minutes.
  7. Add baby spinach and toss until just wilted.
  8. Sprinkle with sesame seeds and serve over rice or noodles.

Tip: Keep vegetables crisp by not overcooking. They should be tender but still have a slight crunch.
