Apple Peach Crisp

This apple and peach crisp is pure comfort food, warm, sweet organic fruit from your organic box Large Family Box topped with a buttery, crunchy oat topping. It's easier than pie and absolutely delicious served with vanilla ice cream or custard.

  • 750g apples, peeled and sliced
  • 600g peaches, sliced
  • Optional: 1 banana, sliced (for extra sweetness)
  • ¼ cup brown sugar (for fruit)
  • 2 tablespoons cornflour
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • Juice of ½ lemon

For the Crisp Topping:

  • 1 cup rolled oats
  • ¾ cup plain flour
  • ½ cup brown sugar
  • ½ cup shredded coconut (optional)
  • 100g cold butter, cubed
  • ¼ teaspoon salt
  • ¼ cup chopped walnuts or almonds (optional)

  1. Preheat the oven to 180°C. Grease a 20cm x 30cm baking dish.
  2. Prepare the fruit: Peel and slice apples. Slice peaches (and banana if using).
  3. In a large bowl, combine sliced fruit, ¼ cup brown sugar, cornflour, cinnamon, nutmeg, and lemon juice. Toss gently until the fruit is evenly coated.
  4. Transfer fruit mixture to the prepared baking dish. Spread evenly.
  5. Make the crisp topping: In a bowl, combine oats, flour, brown sugar, coconut (if using), and salt.
  6. Add cubed cold butter. Use your fingertips or a pastry cutter to rub the butter into the dry ingredients until the mixture resembles coarse breadcrumbs with some larger chunks.
  7. Stir in chopped nuts if using.
  8. Sprinkle the crisp topping evenly over the fruit. Don't press it down. Leave it loose and chunky for maximum crunch.
  9. Bake for 35-40 minutes until the fruit is bubbling around the edges, the topping is golden brown, and your kitchen smells amazing.
  10. Remove from the oven and let cool for 10 minutes before serving. 

Serving Suggestions:

Perfect Sunday dessert! Serve warm with a scoop of vanilla ice cream melting over the top. Also delicious for breakfast with yogurt!

Storage: Keeps covered in the fridge for 4 days. Reheat portions in the microwave or oven. The topping gets extra crunchy when reheated!

Variations: Add fresh or frozen berries, use all apples or all peaches, or add a handful of raisins to the fruit mixture.
