Apple Peach Crisp
This apple and peach crisp is pure comfort food, warm, sweet organic fruit from your organic box Large Family Box topped with a buttery, crunchy oat topping. It's easier than pie and absolutely delicious served with vanilla ice cream or custard.
- 750g apples, peeled and sliced
- 600g peaches, sliced
- Optional: 1 banana, sliced (for extra sweetness)
- ¼ cup brown sugar (for fruit)
- 2 tablespoons cornflour
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- Juice of ½ lemon
For the Crisp Topping:
- 1 cup rolled oats
- ¾ cup plain flour
- ½ cup brown sugar
- ½ cup shredded coconut (optional)
- 100g cold butter, cubed
- ¼ teaspoon salt
- ¼ cup chopped walnuts or almonds (optional)
- Preheat the oven to 180°C. Grease a 20cm x 30cm baking dish.
- Prepare the fruit: Peel and slice apples. Slice peaches (and banana if using).
- In a large bowl, combine sliced fruit, ¼ cup brown sugar, cornflour, cinnamon, nutmeg, and lemon juice. Toss gently until the fruit is evenly coated.
- Transfer fruit mixture to the prepared baking dish. Spread evenly.
- Make the crisp topping: In a bowl, combine oats, flour, brown sugar, coconut (if using), and salt.
- Add cubed cold butter. Use your fingertips or a pastry cutter to rub the butter into the dry ingredients until the mixture resembles coarse breadcrumbs with some larger chunks.
- Stir in chopped nuts if using.
- Sprinkle the crisp topping evenly over the fruit. Don't press it down. Leave it loose and chunky for maximum crunch.
- Bake for 35-40 minutes until the fruit is bubbling around the edges, the topping is golden brown, and your kitchen smells amazing.
- Remove from the oven and let cool for 10 minutes before serving.
