Apple & Cinnamon Tea Cake
And after our customer question this week, it seems only right that this one makes a comeback!
- 3 apples, peeled, cored and thinly sliced
- 125g butter, softened
- 3/4 cup caster sugar
- 2 eggs
- 1½ cups self-raising flour
- 1/2 cup milk
- 1 tsp vanilla
- 1–2 tsp cinnamon
- 1 tbsp raw or brown sugar
- Heat oven to 180°C. Grease and line a 20cm round cake tin.
- Cream butter and caster sugar until light and fluffy.
- Beat in eggs one at a time.
- Add vanilla.
- Fold through flour and milk until just combined.
- Spoon the cake mixture into the prepared tin and smooth the top.
- Arrange the apple slices over the top of the cake.
- Combine cinnamon and brown sugar and sprinkle generously over the apples.
- Bake for approximately 35–45 minutes, or until a skewer inserted into the centre comes out clean.
- Allow to cool slightly before serving.
And to settle this week's question — the apple goes ON TOP, not through the cake batter.
Lovely warm with a little custard too.
