Apple Cinnamon Pancakes

These fluffy apple cinnamon pancakes make a delicious breakfast, weekend brunch, or even a simple dessert. The grated apple adds natural sweetness and keeps the pancakes incredibly moist, while cinnamon brings that warm, comforting flavor everyone loves.

Ingredients:

  • 2 large apples, peeled and grated
  • 1 banana, mashed (optional, for extra sweetness)
  • 2 organic Eggs 
  • 1 cup organic full cream milk 
  • 2 cups self-raising flour
  • 2 tablespoons sugar or honey
  • 1 teaspoon cinnamon
  • ½ teaspoon vanilla extract
  • Pinch of salt
  • Butter for cooking
  • Maple syrup and extra apple slices for serving

Method:

  1. Peel and grate the apples. Squeeze out any excess moisture using a clean tea towel.
  2. In a large bowl, whisk together organic eggs, milk, mashed banana (if using), vanilla, and sugar.
  3. Add flour, cinnamon, and salt. Mix until just combined (don't overmix - some lumps are fine).
  4. Fold in the grated apple.
  5. Heat a non-stick pan or griddle over medium heat. Add a small knob of butter.
  6. Pour ¼ cup of batter per pancake. Cook for 2-3 minutes until bubbles form on the surface.
  7. Flip and cook for another 2 minutes until golden brown.
  8. Keep warm in a low oven while you cook the remaining batter.
  9. Serve stacked with maple syrup, extra apple slices, and a dusting of cinnamon.

Serving Suggestions: Top with Greek yoghurt, fresh berries, or a dollop of organic butter. Kids love these with a drizzle of honey!
