Carrots

This Easter, embrace your inner Easter Bunny and enjoy an underrated superfood, carrots.

Carrots are packed with beta carotene, fibre vitamin K1, potassium and antioxidants. They are a weight-loss friendly food (perfect post Easter egg binge), and studies have shown that they help to boost the immune system, reduce cancer and stroke, aid digestion, lower cholesterol levels and improve eye health.

Carrots are delicious on their own, or you can try some of the following preparations. Because our organic produce is free of harmful pesticides, there is no need to remove the nutrient-dense peel, simply give it a good scrub. 

  • Cut in to fingers and eat plain or dip into hummus.
  • Juice with parsley, celery and ginger for a revitalising tonic.
  • Boil carrot slices for 7 - 9 minutes, then stir through garlic, honey, butter, salt and pepper.
  • Roast carrot fingers with garlic and rosemary at 220°c for 20 minutes.
  • Steam strips for 5 - 7 minutes and then add a squeeze of lemon to taste.
  • Add peels and tips to stock for a delicious and nutritious boost.
