Week 25 ~ Last Weeks Produce Hacks from Alice

Before my OrganicBox deliveries, I always felt like I had to follow a recipe to the letter.

Now, I cook with confidence. I trust the ingredients, get creative with what's left in the fridge, and know the vegetables will always bring plenty of flavour.

This week's fridge rescue was a simple, nourishing meal made from leftover veggies in the electric frypan.

🥬 What was left in the fridge?

  • 1 red onion
  • 2 cloves garlic, crushed
  • Celery
  • Zucchini
  • White cabbage

Plus ingredients from the panty:

  • 250ml quality vegetable stock
  • A splash of soy sauce
  • Ghee for cooking

I sautéed the onion and garlic in ghee, added the celery and let it soften, then tossed in the zucchini until golden. Next came the shredded cabbage, followed by the stock. After a gentle simmer until everything was tender, I finished it with a splash of soy sauce and a quick sauté.

That's it.

No measuring. No strict rules. Just simple ingredients and a little confidence.

🥩 For the meat lovers:
Brown 250g beef mince before adding the celery, and swap the vegetable stock for beef stock if you prefer.
