From Kale to Cold-Pressed Juice:

Two Simple Ways to Rescue the Last of Your OrganicBox

Every week before her next OrganicBox delivery arrives, Alice challenges herself to use every last piece of fresh produce left in her fridge.

This week, the stars of the show were a bunch of kale, a handful of green beans, half a watermelon and a few pears.

Instead of letting them sit another day, Alice turned them into two fresh, delicious creations that prove the best meals often come from using what you already have.

🥗 Kale & Green Bean Crunch Salad

This week's OrganicBox leftovers were a bunch of kale and some green beans.

I started by rinsing the kale and patting it dry before roughly tearing the leaves from the stalks and placing them into a large bowl.

To soften the kale and bring out its flavour, I massaged the leaves with 2 teaspoons of olive oil and ¼ teaspoon of salt for about a minute.

This simple step makes a huge difference to both the taste and texture.

For the green beans, I blanched them in boiling water for two minutes before transferring them straight into ice water to stop the cooking process and keep their crunch.

Next came a look through the pantry.

I added a handful of dried cranberries along with pistachios, activated pepitas, sesame seeds, toasted slivered almonds and natural slivered almonds.

From the fridge I grated over some parmesan cheese before gently tossing everything together.

The result was a colourful, crunchy salad packed with flavour, texture and goodness.

Don't overlook kale when it's the last vegetable left in the fridge.

A quick massage with olive oil and salt transforms it into a tender, delicious salad base and is a perfect way to use up all those little bits and pieces already sitting in your pantry.


🍉 Watermelon & Pear Cold-Pressed Juice

One thing I've discovered since receiving my OrganicBox deliveries is just how incredible certified organic produce tastes when it's turned into fresh juice.

This week I still had half a watermelon and several pears waiting to be used.

Rather than letting them go another day, I simply ran them through my cold-press juicer and added half a lemon to balance the sweetness.

Stored in a sealed glass bottle or jar, the juice stays beautifully fresh in the fridge for up to four days.
