Fresh Produce, New Recipes and Pantry Staples 💚
One of the things I'm really loving about my weekly OrganicBox delivery is discovering recipes that work with whatever fresh, seasonal produce arrives at my door.
I've noticed how much my approach to cooking has changed over the past few months. Rather than deciding what I want to cook and then heading to the shops with a long list of ingredients, I'm doing things the other way around.
I open the fridge, see what I've got and then look for recipes that make the most of it.
And something else has happened along the way. My pantry has grown too!
A Few Good Pantry Staples Make All the Difference
When I first started my OrganicBox deliveries, I certainly didn't have all the ingredients I now find myself reaching for regularly.
But as I've discovered new recipes and experimented with different flavours, I've gradually added a few things that have become firm favourites.
Greek yoghurt, almonds, dried cranberries, Dijon mustard, fresh dill, sun-dried tomatoes, capers, walnuts, feta, parmesan, honey and maple syrup are now some of my regular staples.
What I love about these ingredients is how versatile they are.
A little Greek yoghurt can become a creamy salad dressing. Dijon mustard, honey and lemon can transform roasted vegetables. A handful of toasted nuts adds a beautiful crunch, while capers, dill or sun-dried tomatoes can bring a completely different flavour to a familiar vegetable.
And because I'm using these ingredients across several recipes, I'm not constantly buying something new for every meal.
It's making cooking from scratch so much easier and a lot more enjoyable.
This Week's Kitchen Creations
This week I tried three lovely recipes that made the most of my OrganicBox produce and some of those pantry favourites.
Cranberry, Broccoli and Apple Salad with Creamy Greek Yoghurt Dressing
Inspired by Nico Pallotta at The Plant Based School, this was a lovely way to bring fresh broccoli and apple together.
The sweetness of the dried cranberries worked beautifully with the creamy Greek yoghurt dressing, and I loved the combination of flavours and textures.
It's another example of how a vegetable I might once have simply steamed for dinner can become something quite different.
Roasted Caramelised Cabbage with Crispy Capers, Garlic Crunch and Creamy Honey-Dijon
You might remember my discovery a couple of weeks ago that cabbage can be absolutely delicious when it's roasted and caramelised.
Well, I couldn't resist making this one again!
This time, I used Chinese cabbage from my latest OrganicBox delivery, and it worked exceptionally well.
The caramelised cabbage, crispy capers, garlic and creamy honey-Dijon dressing make such a wonderful combination.
This recipe, inspired by Caitlin Latessa-Greene at @starinfinitefood, has definitely become one of my favourites.
I still can't quite believe how much my opinion of cabbage has changed!
Roasted Cauliflower with Sun-Dried Tomato, Dill and Walnut Crumble
Another wonderful recipe from @starinfinitefood, and this time I had some beautiful purple cauliflower left from the previous week's delivery.
The sun-dried tomatoes, fresh dill and toasted walnuts added so much flavour and texture.
I love finding different ways to use cauliflower, and roasting it with a delicious topping is becoming one of my favourite ways to prepare it.
It's also lovely knowing that the vegetables from the previous week's OrganicBox are still fresh enough to create something special.
Making the Most of the Little Bits Left Over
Of course, a Fridge Rescue wouldn't be complete without using up a few odds and ends!
I had some sweet potato left over, which I'd roasted earlier in the day with purple onion.
Just before serving, I popped it back into the oven with a little butter to help it caramelise.
Such a simple thing to do, but it made a lovely side dish.
And then there were the mushrooms.
I had about 150 grams left from the previous week's delivery and decided to make a quick garlic butter mushroom side.
I didn't manage to take a photo, but they were so delicious that I thought I'd share exactly how I made them.
Alice's Quick Garlic Butter Mushrooms
Ingredients
- 150 g fresh mushrooms
- A little olive oil
- Salt and freshly cracked black pepper
- 20 g butter
- 1 small garlic clove, grated
- Optional: a dash of cream
Method
- Heat a little olive oil in a skillet over medium-high heat.
- Add the mushrooms with a good sprinkle of salt and a twist of black pepper.
- Cook for approximately 5 minutes, until the mushrooms have browned nicely.
- Add the butter and grated garlic, then sauté for another minute until fragrant.
- Serve immediately as a delicious side dish.
For a creamier version: Add a dash of cream after the garlic and butter, then let everything simmer gently for another 5 minutes.
That's it!
A handful of leftover mushrooms, a little butter and garlic, and you've got something really lovely to serve alongside dinner.
It's these little additions that make a meal feel special without needing to buy lots of extra ingredients.
A New Way of Thinking About Food
The more I cook this way, the more I realise that a weekly box of fresh produce is so much more than just a delivery of vegetables.
For me, it's become an opportunity to try new things, discover flavours I might never have considered and build confidence in the kitchen.
I'm also learning that having a few versatile ingredients in the pantry makes all the difference.
I don't need to buy a long list of groceries every time I want to try something new. More often than not, I've already got most of what I need.
My fridge is full, my pantry has a few more useful staples, and I'm making more meals from scratch than ever before.
Best of all, I'm really enjoying it.
Who knew that simply trying to use up the vegetables before my next delivery would turn into such a wonderful cooking adventure?
And I'm certainly not finished experimenting yet! 💚

Alice's Fridge Rescue Tip
Build your pantry gradually with ingredients you can use in lots of different recipes.
You don't need to buy everything at once. As you discover new dishes, you'll start to notice certain ingredients appearing again and again.
For me, things like Dijon mustard, Greek yoghurt, capers, nuts, dried cranberries and sun-dried tomatoes have become incredibly useful.
Having them on hand means I can turn whatever fresh vegetables are in the fridge into something delicious without needing another trip to the shops.
And don't forget those little leftovers. Sometimes a handful of mushrooms or half a sweet potato can become the finishing touch to a lovely meal.
