Vegan Bok Choy Laksa

 

1 Bok Choy

250g Cauliflower

3 carrots

Tbsp Organic Tamari

Small Knob Ginger

2 Cloves Organic Garlic

½ Lime

300ml Coconut Milk

1 tsp Turmeric

1 L Australia’s Own Chicken Style Stock

Vermincelli Rice Noodles

250g Tofu

1 Tablespoon Sesame Oil

 

Method 

 

  1. Fry Tofu in sesame oil for 1-2 minutes each side, then add all ingredients to the pot.
  2. Boil for up to 10 minutes.
  3. Garnish with sesame seeds and serve with organic brown rice.
