Spiced Cauliflower Soup


We have bins overflowing with super fresh, certified organic locally grown cauliflower this week! There are some smaller ones on sale which are just perfect for our favourite cauliflower soup recipe (honestly we could eat this soup every day of the week it's so delicious).

Why this soup is good for you:
Cauliflower is a rich source of potassium, vitamin C, and glucosinolates. Glucosinolates are sulfur-containing
compounds that give cauliflower its pungent smell and flavour.Glucosinolates activate the body’s detoxification system, and research suggests that they may play a role in preventing various types of cancer.
Garam masala is a blend of spices commonly used in Ayurvedic cooking. Garam masala is said to “heat the body”, meaning it raises body temperature and adds a warming component to meals. Health benefits of garam masala include boosting immunity, promoting weight loss, helping with digestive processes, alleviating pain, and lowering blood sugar levels.

Spiced Cauliflower Soup:

Ingredients (Serves 4)
4-5 cups cauliflower, cut into florets
1 litre broth (vegetable or chicken) or liquid stock
1 can coconut milk or cream
2 tsp garam masala
(black peppercorns, cinnamon, clove, cardamon, nutmeg)
1-1.5 pinches cayenne pepper
1 pinch sea salt
1 pinch freshly ground black pepper
1 small handful coriander leaves, to serve

Method
1. Put everything into a pot and simmer for 7-10
minutes.
2. Once cooked blend the soup to a smooth consistency - I like to leave a few lumps of cauliflower in the soup too.
3. Serve into bowls and sprinkle chopped coriander over the top.
