Slow Cooker Organic Coconut Pudding
3 tbsp. organic butter or vegan equivalent
6 cups coconut milk
2 cups cooked rice
¼ tsp. salt
½ tsp. cinnamon
½ teaspoon vanilla extract

- Butter the slow cooker. Make sure to cover well
- Add ingredients
- Cover slow cooker and cook for about 3-4 hours on low. Make sure to stir occasionally to help the rice absorb the flavours.
- Simply spoon into a bowl, add your favourite fruit toppings or a drizzle of organic honey or maple syrup, and enjoy!
