Organic Savoury Spinach and Mushroom Crepes


12 crepes
3 tablespoons extra virgin olive oil
500g organic mushrooms, rinsed, trimmed and thinly sliced
1⁄2 cup fresh flat-leaf parsley, finely chopped
1 garlic clove, finely chopped

500g fresh spinach, washed, stemmed and coarsely chopped


METHOD
Step 1
Make crepes if using homemade and set aside.


Step 2
Preheat oven to 350°F.


Step 3
Heat the oil in a large frying pan, then add the mushrooms and cook, stirring,
over medium-high heat until they begin to brown. Stir in the parsley, garlic, and a
pinch of salt and pepper. Cook for 1 minute.


Step 4
Reduce heat to medium and stir in the spinach. Cover and cook until just wilted,
about 2 minutes.


Step 5
Spoon mixture down the center of each crepe. Roll up crepes and arrange side by
side in a baking dish.


Step 6 (If desired)
Sprinkle with cheese and then cover pan with foil and heat until cheese melts.
