Creamy Organic Cauliflower Soup Recipe

1 large cauliflower, cut into pieces 2 tbsp organic butter
1 medium to large organic onion
2 cloves garlic, minced
4 cups homemade chicken stock (or organic stock)
1⁄2 tsp dried thyme or 4 sprigs of fresh thyme
1⁄4 cup half and half, cream or milk
salt and pepper to taste.
In a large stockpot over medium heat melt the butter.
Add onions and sauté until soft and tender, about 5 minutes.
Add minced garlic and sauté for 1 more additional minute.
Add chicken stock, thyme,and cauliflower to the pot.
Bring back to a boil and reduce heat and simmer for 20 minutes or until cauliflower is soft and tender.
Salt and pepper to taste.
